1 kilo strawberries. (stalks removed)
750 g coarse sugar
1 orange zest and juice
6 coriander (Chinese parsley) leaves
10 ground coriander grains
Put a white plate in the freezer.
Put the halved strawberries in a bowl. Add the sugar and orange juice.
Stir and put in the fridge for the night so that the sugar be flavoured by the strawberries.
Early in the morning, gently bring the mixture to the boil and let it cool down.
In the evening, drain with a screen not to damage the strawberries. Collect the syrup and boil it down to proper consistency.
Put the strawberries and coriander back into the syrup, simmer for a few minutes, check consistency on the cold plate, pour in jars.
Excellent with “faisselle” (cottage cheese) adding a drop of cream and a few fresh strawberries.
